Valentine 7 Layer Finger Jell-O

Valentine's day finger jell-o One of the first fun things I did with Zoe when I moved in was to make stripped finger Jell-O for her.  She was impressed with the rainbow colors and at that point thought I was the best step-mom ever. 

I thought I’d make it again, only this time with a Valentine’s Day Theme.  I like the different shades of reds, and the flavors, strawberry, cherry, raspberry all work well together.  I won’t lie, this is time-consuming, and kind of messy to make, but the smiles and giggles at the finished product make it all worth while.

You will need
4 boxes (3 oz.)  Jell-O.  I used cherry, strawberry, raspberry and strawberry banana.  You can choose any flavors you want.
1 can (12 oz.) sweetened condensed milk
1 box (4 envelopes) Knox unflavored gelatin.
Boiling water.  

7 Layer Finger Jell-O-min

In a small bowl mix 1 box flavored Jell-O, 1/2 envelope gelatin, and 1 cup boiling water.  Stir until completely dissolved.  Let cool to room temperature.
Poor room temperature jello into 9×13 pan, and place in refrigerator for 15 minutes, or until set.  You will do this for every flavor jello. 

In a separate small bowl sprinkle 2 envelopes of gelatin over 1 cup cold water and let set.  In a large bowl, combine sweetened condensed milk with 1 cup boiling water. Stir until combined.  Add 1/2 cup boiling water to gelatin mixture to dissolve gelatin.  Add to milk mixture, stirring until combined.  Cool to room temperature. 

Pour 1 cup milk mixture on set layer of jello.  Refrigerate for 15 minutes or until set. 

Repeat for next flavor, alternating jello layer with milk layer. 

Let Jell-O set completely.  Cut and serve. 

Notes:  I heat the water to boiling for each flavored jello layer in the microwave.  Once a jello layer is poured into the pan, I make the next flavor jello and let it cool to room temperature while the two layers prior are setting.
