Strawberry Chocolate Chip Cookies

I was in the mood for chocolate chip cookies today.  I blame Averie at Averie Cooks.  Her soft batch cream cheese chocolate chip cookies are everywhere I look online.  And let’s be honest, they look the mouth watering delicious.  But they require chilling the dough for 2 hours and I just didn’t have the time to wait for that kind of nonsense today. 

The problem became, everyone does chocolate chip cookies.  It’s going to take something besides cream cheese to make them stand out.  That’s when I thought flavor. Why not strawberry?  Who doesn’t like chocolate dipped strawberries?

Strawberry Chocolate Chip Cookies

2.5 cups flour
1 tsp. baking powder
1.5 sticks butter or margarine, softened
1 cup sugar
1 package strawberry Jell-O gelatin
1 egg
1 tsp. vanilla
1 package chocolate chips  (Milk chocolate or dark chocolate would work best.)


Preheat oven to 400 degrees

In large bowl, combine margarine and sugar with mixer until light and fluffy.
Add gelatin, and mix well.
Add egg and vanilla and beat until incorporated.
Slowly add flour, baking powder and chocolate chips and mix well.

Drop by teaspoonfuls on to cookie sheet 1 inch apart.
Bake 8-10 minutes or until edges are slightly brown
Place cookies on cooling rack to cool.

If strawberry isn’t your thing, cherry would be great too!  Sam loves chocolate covered cherries and next time I’ll use cherry flavored Jell-0.
